Creamy Mushroom Garlic Chicken



This skillet chicken is one of my favorite ones to make when I want to take a break from pasta and rice casseroles. When I want something more elegant on the plate. But it’s till have to be quick and easy. I absolutely love garlicky mushroom sauce on chicken or pork chops. A simple garnish of chopped parsley and you are done and ready to eat. This looks like a weekend dish but since it really doesn’t take much time to make, it’s great for busy weeknights too.

Simply slice chicken breast in half lengthwise, season each piece and dredge in flour. Cook in a skillet with oil and remove onto a plate. Make the creamy mushroom sauce in the same pan, add the chicken back in. Garnish with chopped parsley and serve. Since the chicken breast pieces are thin, they don’t take much time to cook.


You can serve this Creamy Mushroom Chicken with mashed potatoes or pasta, preferably fettuccine noodles.

 
Ingredients
  • 2 boneless skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup flour
  • 1 tablespoon olive oil
  • 2 tablespoons butter , divided
  • 1 and 1/2 cups sliced white mushrooms
  • 1 and 1/2 teaspoon minced garlic
  • 1/2 cup chicken stock
  • 1/3 cup heavy cream
  • chopped parsley
